Honey Roasted Butternut Squash
1 medium butternut squash
6 Tbsp. melted butter
1/4 c. honey
1-1/2 tsp. salt
1/2 tsp. cinnamon
Preheat oven to 400°F. Cut off the ends of the squash. Peel it, cut it in half lengthwise and remove the seeds. Cut the squash into 1-1/2" cubes and place on a baking sheet. Mix the melted butter, honey and cinnamon; brush over all the pieces of squash. Roast in the oven for 45 - 55 minutes until tender, turning several times to ensure even browning.
Honey Glazed Carrots
1 lb. bag ready to eat baby carrots
2 Tbsp. honey
1 Tbsp. butter or margarine
Place carrots in a saucepan and cover with water. Heat to boiling; reduce heat to low. Cover and simmer 10 - 15 minutes or until tender. Drain well. Add honey and butter to carrots in saucepan. Cook, stirring frequently, until butter is melted and carrots are glazed. Sprinkle with dill and parsley, if desired.
