Pineapple Honey Glazed Ham

Pineapple Honey Glazed Ham

2 c. milk

4 - 5 pound fully cooked boneless ham

8 oz. can pineapple slices

1/3 c. honey

1 Tbsp. ground mustard

Bake ham in a baking pan at 325°F for 1 hour. Drain pineapple, reserving liquid. Combine pineapple juice, honey & mustard; mix well. Score top of ham in diagonal slices and top with pineapple slices. Generously brush honey mixture over the entire surface of the ham. Bake 30 - 45 minutes longer, basting every 10 minutes. Let stand 10 - 15 minutes before slicing.

Honey Garlic Chicken

Honey Garlic Chicken

1 c. vegetable oil

1 c. all purpose flour

1 tsp. dried thyme

1 tsp. dried oregano

1/2 tsp. paprika

1/4 tsp. cayenne pepper

1 pound boneless, skinless chicken breast, cut into 1/2" pieces

salt & pepper to taste

2 large eggs, beaten

Honey Garlic Sauce

In a medium saucepan over medium high heat, combine 1/2 c. honey, 4 cloves of minced garlic, and 2 Tbsp. soy sauce. In a small bowl, combine 1 Tbsp. cornstarch and 1/4 c. water. Stir cornstarch mixture into the saucepan and heat until thickened, about 1 - 2 minutes; set aside and keep warm.

Chicken

In a large bowl, combine the flour, thyme, oregano, paprika and cayenne pepper. Season chicken chunks with salt and pepper. Working one at a time, dredge chicken in flour mixture, dip into eggs, then dredge in flour mixture again, pressing to coat. Heat vegetable oil in large skillet over medium high heat. Working in batches, add chicken to the skillet and cook until evenly golden and crispy, about 3 - 4 minutes on each side. Transfer to a paper towel lined plate. Continue until all chicken is cooked. Serve immediately with honey garlic sauce.

Slow Cooker Mexican Honey Garlic Chicken and Potatoes

Slow Cooker Mexican Honey Garlic Chicken & Potatoes

1/2 c. honey

1 pkg. taco seasoning mix

6 cloves garlic, finely chopped

1 Tbsp. butter, melted

2 lb. red potatoes, cut into 3/4" pieces

1/2 tsp. salt

2 lb. chicken legs

1 lime, cut into wedges

2 green onions, thinly sliced

2 Tbsp. chopped fresh cilantro

Spray a 5 quart slow cooker with cooking spray. In a large bowl, mix honey, taco seasoning, garlic, melted butter and salt. Add potatoes; toss to coat. Using a slotted spoon, transfer potatoes to slow cooker. Add chicken to bowl with leftover honey mixture; toss to coat. Arrange chicken on top of potatoes in slow cooker. Pour remaining liquid over chicken. Cover; cook on high heat setting for 3 - 4 hours or until potatoes are tender and instant read thermometer inserted into thickest part of chicken leg without touching the bone reads at least 165°F. Do not take the lid off of the cooker for at least the first 3 hours.

Line a large rimmed baking pan with aluminum foil. Position oven rack 4" from broiling element; set oven control to broil. Transfer chicken to pan. With a slotted spoon, transfer potatoes to a seperate serving platter; cover with foil to keep warm. Pour 1/4 cup of liquid from slow cooker over chicken. Put in the oven and broil for 2 - 4 minutes or until chicken skin is golden brown and crisp. Turn chicken; pour another 1/4 cup of liquid from the slow cooker over the chicken. Broil another 2 - 4 minutes longer or until the skin is golden brown and crispy on the second side. Serve the broiled chicken with potatoes and lime wedges. Top with the green onions and the cilantro.

Honey Applesauce Meatloaf

Meatloaf

2 pounds ground beef

2 pounds ground pork

2 small onions, chopped

1 c. applesauce

2 Tbsp. honey

3 Tbsp. milk

1 sleeve wheat Ritz crackers, crushed

1 tsp. salt

2 eggs

Topping

1 c. ketchup

1 Tbsp. prepared mustard

1/4 c. honey

Preheat the oven to 350°F. Combine all of the meatloaf ingredients and put into a 13 x 9 inch pan that has been sprayed with cooking spray. Mix the sauce ingredients together and spread over the prepared meatloaf. Bake meatloaf for 1 hour, or until the center has been thoroughly cooked.

Honey Barbecue Meatball Foil Packets

Honey Barbecue Meatball Foil Packets

1/2 c. barbecue sauce

1/4 c. honey

16 mini cooked meatballs

8 thin slices sweet onion

8 small frozen corn on the cob

2 c. sliced cooked potatoes

1/2 tsp. salt

1/4 tsp. pepper

Cut 4 sheets of heavy duty foil into 18 x 12 inch pieces; spray half of one side of each foil sheet with nonstick cooking spray. In a small bowl, combine barbecue sauce and honey; blend well. Place 4 meatballs, 2 onion slices, 2 cobs of corn and 1/2 c. sliced potatoes on center of sprayed side of each sheet of foil. Sprinkle with salt and pepper. Spoon 2-1/2 Tbsp. sauce mixture onto meatballs and vegetables on each foil sheet. Fold foil over meatballs and vegetables so edges meet. Wrap packets securely using double-fold seals, allowing room for heat expansion. Cook in a 350°F oven for 20 - 25 minutes or until potatoes are tender, turning several times; or place 4 - 6 inches above medium coals and gril for 20 - 25 minutes, turning several times.
