  • 1/3 c. cider vinegar
  • 2 Tbs. vegetable oil
  • 1/4 c. honey
  • 1 Tbs. Dijon mustard
  • 1-1/2 lb. small new potatoes, cut in bite sized pieces
  • 5 slices bacon, cooked crisp and crumbled
  • 2 Tbs. parsley
  • 2 Tbs. green onion, chopped
  • 1/2 tsp. salt
  • salt & pepper to taste


Preheat oven to 375 degrees F. Combine vinegar, oil, honey and mustard; mix well. Toss half of the dressing with the potatoes, reserving half. Spread potatoes evenly on a sheet pan. Bake potatoes for 18 - 20 minutes, tossing in the remaining dressing halfway through. Remove from oven. Add bacon, parsley, green onions and salt; mix well. Season with salt and pepper to taste before serving.
