- 4 skinless salmon filets
- 1/2 c. honey
- 1/3 c. soy sauce
- 2 tsp. minced garlic
- 1 tsp. minced fresh ginger
- 4 c. broccoli florets
- optional: chopped scallion, sesame seeds, parsley
Place the salmon filets in a large zip-lock bag. Whisk the honey, soy sauce, garlic, and ginger together in a medium bowl. Pour half of this sauce over the salmon filets, coating them thoroughly. Refrigerate for 15 minutes or up to 4 hours. Preheat oven to 350 degrees F. Line a baking sheet with foil. Line the marinated salmon filets on the baking sheet. Set aside the used marinade. Bake salmon for 15 - 20 minutes depending on thickness. Broil the salmon for the last 3 minutes for crispier edges.
Put the broccoli into a saucepan and cover with water. Bring to a boil; cover and reduce heat to medium. Cook for 6 - 7 minutes until the broccoli is bright green and tender. Pour all of the marinade into a small skillet. Bring to a boil, then reduce heat to low - medium and allow to simmer for 4 minutes. Remove from heat and allow to cool and thicken. Garnish salmon with optional ingredients listed; serve with steamed broccoli and thickened glaze.
