Ingredients
- 2 gala or fuji apple, cored and sliced
- 2 Tbs. butter
- 1/4 tsp. nutmeg
- pinch salt
- 1/4 c. honey
- 1 pkg. refrigerated hash browns, 20 oz.
- 1 c. shredded cheddar cheese, divided
- 2 eggs, beaten
- 1 tsp. salt
- additional honey for serving
- 1/2 c. sour cream
- 2 scallions, chopped
Instructions
Preheat the waffle iron; preheat the oven to 275 degrees F. Heat butter over medium heat and saute the apples until they just begin to soften. Add the nutmeg, salt and honey; continue to cook for another 5 minutes. Set aside and keep warm.
Mix the hash browns, 1/2 c. of the cheddar cheese, egg and salt. Lightly oil the waffle iron and spoon a heaping 1/2 c. of hash brown mixture onto the iron; spread out with the measuring cup and cook until golden brown and crispy, about 10 - 12 minutes. Transfer each waffle to a sheet pan and sprinkle with 2 Tbs. of the shredded cheese. Place in the oven to keep warm as you continue with the remaining hash brown mixture. Serve each waffle topped with the stewed apples, a dollop of sour cream, scallions and a drizzle of warm honey.
